Chef Shantha Peiris, the culinary force behind Nyne LUXE’s evolving dining philosophy, combines more than four decades of international experience with a deep respect for quality ingredients, sustainability, and innovation. Having refined his craft in renowned kitchens across the world, he has developed a distinctive culinary style that blends technical excellence with authentic flavours.

As the world marks World Sustainable Gastronomy Day, Chef Shantha emphasises that sustainability has become an integral part of modern fine dining.

“At Nyne LUXE, sustainable gastronomy means creating exceptional culinary experiences while being mindful of our impact on the environment, local communities, and future generations. It is about sourcing ingredients responsibly, supporting local farmers and producers whenever possible, minimising food waste, and embracing sustainable practices without compromising quality or luxury,” he said.

According to Chef Shantha, sustainability is increasingly shaping the future of luxury hospitality, with guests expecting brands to demonstrate environmental and social responsibility.

“Today’s guests are increasingly conscious of how their choices impact the environment, and they expect brands to operate responsibly. True luxury is no longer defined solely by exclusivity and comfort; it is also about authenticity, ethical practices, and long-term value,” he noted.

He believes chefs play a vital role in driving this change, not only by preparing exceptional cuisine but also by educating diners about sustainable food choices and encouraging environmentally responsible eating habits.

Reducing food waste remains a key priority at Nyne LUXE. Chef Shantha explained that the culinary team focuses on meticulous menu planning, accurate forecasting, and efficient inventory management to maximise ingredient utilisation. The kitchen also embraces whole-ingredient cooking wherever possible, creatively incorporating different parts of produce into menu offerings while carefully monitoring portion sizes and proper storage to maintain freshness and minimise waste.

Automobile Association of Ceylon represented at FIA Extraordinary General Assembly in Macau
The Federation Internationale de l’Automobile (FIA), the world's largest mobility and motorsport organisation headquartered in Geneva, Switzerland, recently held its Extraordinary General Assembly in Macau, hosted by the General Association of Macau, China. The FIA comprises 245 member clubs representing 149 countries.

A delegation from the Automobile Association of Ceylon (AAC), comprising members of its Executive Committee, represented Sri Lanka at the prestigious international gathering.

During the conference, Dhammika Attygalle, President of the AAC, and Devapriya Hettiarachchi, Secretary of the AAC, met with Dr. Mohammed Ben Sulayem, President of the FIA, Carmelo Sanz de Barros, President of the FIA Senate, and Alberto Villarreal, General Manager of the FIA.

The discussions focused on a range of key mobility and road safety issues, including the rising number of road traffic injuries and fatalities worldwide, the future of electric vehicles (EVs), vertical mobility, and initiatives to strengthen road safety awareness. They also explored opportunities to introduce awareness programmes and workshops in Sri Lanka aimed at reducing road accidents and fatalities, in line with the United Nations Decade of Action for Road Safety 2021–2030.
